New Year’s Resolution: Making Healthy Meals for a Picky Eater
We are into the third week of the new year, so there has understandably been a lot of talk about setting and keeping to those New Year’s resolutions. Each year, many of us strive to achieve a healthier lifestyle, which can present its own challenges since many of us are living our lives on the go. One of the resolutions that I aspire to achieve this year is to feed my family healthier meals. Of course, that is easier said than done, especially when you have picky eaters to feed. Finding healthy, kid-friendly recipes that will also please the parents can be quite challenging.
Recently, I read an article by Harvard Health Publishing about the health benefits of becoming a vegetarian. Of course, as with any dietary lifestyle, there are both pro’s and con’s with the balance of nutrition provided with a plant-based diet, but this article got me thinking about the benefits of foregoing meat in more of my meals. With the vegetarian lifestyle on my mind, I wanted to come up with a few new plant-based recipes of my own that I could still convince my kids to eat. Cooking has always been a fun past-time for me, and I love trying out new dishes and putting my own spin on recipes that I find. My family’s favorite meal time is breakfast, so I decided to do a spin on breakfast muffins using a vegetarian sausage while sneaking some veggies into them as well. To my surprise, these Vegetarian Breakfast Muffins are now one of the most popular breakfasts I serve in my house! They are also the perfect grab-and-go breakfasts that I can feel good about feeding to my kids since they are not packed with tons of sugar.
